Perfect for holiday celebrations
Ingredients:
For the crust: 1 ½ cups graham cracker crumbs ¼ cup granulated sugar ½ cup unsalted butter, melted For the filling: 3 (8 oz.) packages cream cheese, softened 1 cup granulated sugar 1 tsp. vanilla extract 3 large eggs 1 cup canned pumpkin puree 1 tsp. ground cinnamon ½ tsp. ground nutmeg ¼ tsp. ground cloves
For the topping: 1 cup sour cream 2 tbsp. granulated sugar 1 tsp. vanilla extract
Method: • Preheat your oven to 325°F. • In a mixing bowl, combine the graham cracker crumbs, sugar and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create an even crust. You can use the back of a spoon to press it down firmly. • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Add the sugar and vanilla extract, and continue beating until the mixture is well combined and creamy. • Add the eggs one at a time, beating well after each addition. Then, add the pumpkin puree, cinnamon, nutmeg and cloves. Mix until everything is fully incorporated and the batter is smooth. • Pour the filling over the crust in the springform pan. Tap the pan gently on the counter to release any air bubbles. Place the pan in the preheated oven and bake for about 50-60 minutes, or until the edges are set but the center is slightly jiggly. • While the cheesecake is baking, prepare the topping by mixing together the sour cream, sugar and vanilla extract in a small bowl. • Once the cheesecake is done baking, remove it from the oven and carefully spread the sour cream topping evenly over the surface. Return to the oven and bake for an additional 10 minutes to set the topping. • Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving. This will allow the flavors to meld and the cheesecake to fully set. • Before serving, carefully remove the sides of the springform pan. Slice the pumpkin cheesecake and enjoy the delightful flavors of the holiday season!
